This easy French onion soup recipe is a breeze to make – and the ingredients are a bit surprising. Using chicken stock instead of bouillon is a gives a rich tasting, soup with a lighter touch and a bit more zing than those made with beef bouillon. This recipe serves four.

Tomato Reduction Sauce with Garlic and Broccoli

This sauce is really a “reduction” — made by cooking much of the water out of your tomatoes and resulting in a thick, sticky sauce. It is great on any type of pasta, is a nice topping on freshly grilled fish and is also good with rice. The more garlic the better.

This recipe was taught to me by an Italian girlfriend in university and I have been making it for 25 years!

Easy Pasta with Simple Pesto Sauce and Feta Cheese Recipe

This is a really tasty, simple recipe. The garlic, tomatoes and goat cheese (with a squeeze of lime) are such a yummy combination – it’s a good wake up for your taste buds when everyday meals get dull. An old friend of mine used to make this all the time, so I give all the credit to her.  My husband and I still make it often and really enjoy it. You can really go by feel with this recipe without screwing up. Less garlic, more cheese? No problem. More tomatoes? Always a good idea. You can even wilt spinach and throw it in there… fresh parsley is good, too…
