Sweet Potato and Carrot Casserole

This sweet potato and carrot casserole is almost better than Christmas presents.  Heck, maybe it is better! My sister-in-laws bakes it for every holiday gathering and trust me when I say there is never any left-over. The addition of the carrots make it a nice change of pace from typical sweet potato recipes – it’s slightly less dense with a somewhat lighter texture. Just delicious.

Tomato Reduction Sauce with Garlic and Broccoli

This sauce is really a “reduction” — made by cooking much of the water out of your tomatoes and resulting in a thick, sticky sauce. It is great on any type of pasta, is a nice topping on freshly grilled fish and is also good with rice. The more garlic the better.

This recipe was taught to me by an Italian girlfriend in university and I have been making it for 25 years!
