Lemon Cake Recipe

Cake Ingredients:

  • 1/2 cup butter
  • 1 cup granulated sugar
  • Grated rind of one lemon (reserve lemon for glaze)
  • 2 eggs
  • 1 1/2 cups sifted, all purpose flour
  • pinch salt
  • 1 tsp. baking power
  • 1/2 cup milk

Lemon Glaze Ingredients:

  • Juice of one lemon
  • 1/4 c. granulated sugar

Directions:

  1. Preheat oven to 350 F.
  2. Cream the butter with the sugar and add the lemon rind.
  3. Gently beat the eggs and milk in a separate bowl.
  4. In a third bowl, sift together dry ingredients and add to creamed butter mixture alternating with wet eggs and milk mixture. Do not over mix.
  5. Bake at 350 for 40-50 minutes in a loaf pan or small, square pan.

Glaze:

  • Juice one lemon and add 1/4 cup of sugar until sugar dissolves. Spoon the mixture over the hot lemon loaf.
